We have a low calorie diet recipe with carrots, parsnips and potatoes for you:
Ingredients (1 portion)
- 2 potatoes (about 200 g)
- 3 carrots (about 200 g)
- 3 parsnips (about 200 g)
- 1 onion (preferably a vegetable onion)
- 1 tbsp olive oil
- 250 ml vegetable broth
- 2 tbsp cream cheese (0.2% fat)
- Italian herbs (eg as frozen mixture)
- Salt pepper
Cut the onion and vegetables into small pieces. Make the onion in a wok or pan with 1 tablespoon of olive oil glassy.
Add the cleaned and chopped vegetables (potato, carrots, parsnips), fill with the vegetable stock and stew for about 10 minutes. Then stir in the cream cheese and season with Italian herbs, pepper and salt. Eye candy: decorate with fresh parsley.
