Meatballs or meatballs do not always have to consist of minced meat. It can be very tasty and especially low in calories in vegetarian variations, such as with the slender kale, prepare.
The recipe for the kale casserole has a low energy density and is packed with vitamins such as vitamin A, vitamin C, vitamin K, folic acid, potassium, iron, magnesium and valuable phytochemicals.
Ingredients (for 2 persons)
- 1 wholemeal roll
- 250 g kale (fresh or frozen)
- 1 onion
- 1 egg
- 2 tablespoons whole wheat flour
- 50 g wholegrain breadcrumbs
- a little rapeseed oil for frying
- Thyme (fresh, dried or frozen)
- Salt, fresh pepper
Preparation Soak the wholemeal roll in hot water, squeeze and dice.
Wash the kale, cut it roughly and cook for about 10 to 15 minutes in boiling salted water. When the kale is cooked, quench under cold water and drain.
If you use chopped frozen kale, you just have to defrost it. Chop the kale very finely and mix with the wholemeal roll. Dice the peeled onion and add to the cabbage mixture with egg, flour and breadcrumbs.
Season with salt, pepper and thyme, knead and make flat meatballs with moistened hands. Heat the rape oil in the pan and fry the meatballs on both sides until golden brown.
